Description

Ingredients (13 ingredients)

  • 1 tbsp olive oil
  • 8 ounces skinless, boneless chicken breast halves, cut into bite-size pieces
  • 0.5 cup chopped onion
  • 0.5 cup chopped red bell pepper
  • 1 clove garlic, minced
  • 4 cups low-sodium chicken broth
  • 1.5 cups frozen corn
  • 1 cup skim milk
  • 1 tbsp cornstarch, or more as needed
  • 1 cup white beans, drained and rinsed
  • 1 cup shredded Cheddar cheese
  • 0.5 tsp salt (Optional)
  • 0.25 tsp ground black pepper

Sauté Chicken and Vegetables

Heat olive oil in a skillet over medium heat. Add chicken pieces, chopped onion, chopped red bell pepper, and minced garlic. Sauté until the chicken is no longer pink and the onion is tender, about 3 to 5 minutes. Transfer the mixture to the Thermomix bowl.

Add Broth and Corn

Prepare Milk and Cornstarch Mixture

In a separate bowl, whisk skim milk and cornstarch together until the cornstarch is completely dissolved. This prevents lumps in the soup.

Add Beans, Cheese, and Seasoning

Add drained and rinsed white beans, shredded Cheddar cheese, salt (optional), and ground black pepper to the Thermomix bowl. Cook for 3 Min./60°C/Linkslauf Stufe 1 until the cheese is melted.
