Description

This creamy rice with peas and bacon, known as Risi e Bisi, is a classic of Venetian cuisine that I often prepare with my Thermomix®. The combination of vialone nano rice, fresh peas and crispy bacon creates a dish rich in flavor and with an enveloping consistency. It is perfect for a family lunch or an informal dinner. The preparation is simple and quick, ideal when you have little time but do not want to give up a tasty and comforting dish. A touch of butter and parmesan at the end makes it irresistible! A true Italian comfort food.

Ingredients (9 ingredients)

  • Peas
  • Vialone nano rice
  • Butter
  • Bacon (stretched)
  • Spring onion
  • Broth
  • Parsley
  • to taste Extra virgin olive oil (EVO)
  • to taste Salt

Preparation (6 steps)

Diced bacon

Dice the stretched bacon into small cubes. This step is used to prepare the bacon for the subsequent cooking.

Spring onion and parsley

Wash and cut the spring onion into thin slices. Wash and finely chop the parsley. Set aside.

Sautéed bacon and onion

Put half of the butter and extra virgin olive oil in the bowl. Heat for 3 Min./120°C/Stufe 1. Add the diced bacon and the spring onion. Sauté for 5 Min./120°C/Stufe 1.

Addition of parsley and peas

Add the chopped parsley and peas to the bowl. Stew for 5 Min./100°C/Stufe 1.

Cooking the rice

Thermomix® Setting
15 min/212°F/Linkslauf Speed 1 100 Reverse

Add the vialone nano rice and broth to the bowl. Cook for 15 Min./100°C/Linkslauf Stufe 1, stirring gently with the spatula occasionally.

Final stirring

Thermomix® Setting
2 min/140°F/Linkslauf Speed 1 60 Reverse

Taste and adjust salt if necessary. Add the remaining butter and stir for 2 Min./60°C/Linkslauf Stufe 1. Serve hot.
