Ingredients (13 ingredients)

  • 16 ounce package cheese gnocchi
  • 0.33333333333333 cup finely chopped shallots
  • 0.33333333333333 cup Pinot Grigio wine
  • 1 clove garlic, finely chopped
  • 0.5 cup salted sweet cream butter
  • 1 tsp black truffle oil
  • 1 cup finely grated Grana Padano cheese
  • 1 tablespoon ground black pepper
  • 0.5 tsp black truffle salt
  • 3 slice shaved black truffle (Optional)
  • 1 tablespoon Grana Padano cheese, or to taste
  • black sea salt
  • ground black pepper

Preparation (5 steps)

Cook the Gnocchi

Bring a large pot of lightly salted water to a boil on the stovetop. Cook the 1 (16 ounce) package of cheese gnocchi in the boiling water until they float to the top, about 2 to 4 minutes. Drain the gnocchi, reserving 1/4 cup of the cooking water.

Sauté Shallots and Garlic

Add ⅓ cup finely chopped shallots and 1 clove finely chopped garlic to the mixing bowl. Add ⅓ cup Pinot Grigio wine. Cook for 7 Min./100°C/Stufe 1 until reduced by half.

Melt Butter and Combine

Add ½ cup salted sweet cream butter and 1 teaspoon black truffle oil to the mixing bowl. Cook for 2 Min./50°C/Stufe 2 until the butter is melted and the truffle oil is well distributed.

Add Gnocchi and Cheese

3 min/122°F/Linkslauf Speed 1 50 Reverse

Add the reserved 1/4 cup cooking water, the cooked gnocchi, and 1 cup finely grated Grana Padano cheese to the mixing bowl. Cook for 3 Min./50°C/Linkslauf Stufe 1, stirring gently with the spatula, until the gnocchi are evenly coated and the cheese is melted.

1 min/122°F/Linkslauf Speed 1 50 Reverse

Add 1 tablespoon ground black pepper and ½ teaspoon black truffle salt to the mixing bowl. Cook for 1 Min./50°C/Linkslauf Stufe 1 to combine. Transfer to a large serving bowl. Top with 3 thin slices shaved black truffle (Optional) and 1 tablespoon Grana Padano cheese. Season with black sea salt and ground black pepper to taste.
