Description

This creamy cauliflower soup is a hearty and warming dish, perfect for the colder months. I often make it in the autumn, when the cauliflower comes fresh from the market. The slight spiciness of the pepper and garlic give the soup a special touch. Served with toasted slices of bread soaked in the cauliflower cooking liquid, it becomes a simple yet delicious meal. An ideal dish for a quick lunch or a light dinner. Vegetarian and easy to prepare!

Ingredients (7 ingredients)

  • 1 piece Cauliflower
  • 1 clove Garlic
  • 4 tbsp Extra virgin olive oil
  • Pepper
  • Salt
  • 4 slice Sliced bread
  • 500 ml Water

Preparation (6 steps)

Prepare cauliflower

Clean the cauliflower, remove the outer leaves, cut in half and remove the hard core. Separate the florets from the stalk.

Steam cauliflower

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Pour 500 ml water into the mixing bowl. Place the cauliflower in the Varoma container and place it on the mixing bowl. Steam for 15 Min./Varoma/speed 1.

Collect cauliflower water

After steaming, remove the Varoma and collect the cauliflower water. Set the cauliflower aside.

Sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Put 4 tablespoons extra virgin olive oil and 1 clove garlic in the mixing bowl and chop for 3 Sec./speed 7. Then sauté for 3 Min./120°C/speed 1.

Add cauliflower and season

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the steamed cauliflower to the mixing bowl, season with salt and pepper and cook for 5 Min./100°C/Reverse rotation speed 1.

Serve soup

Place a slice of toasted bread in a bowl, drizzle with some cauliflower water and drizzle with olive oil. Add the cauliflower on top and serve with a drizzle of olive oil.
