Description

This creamy carrot soup is a vegetarian dish that is ideal as a starter or light main course. With the Thermomix® the preparation is quick and easy. The soup is rich in vegetables and the addition of cream makes it especially creamy. Perfect for cold days and a healthy diet.

Ingredients (8 ingredients)

  • 500 g Carrots, peeled
  • 2 Stück medium sized onion
  • 2 EL Butter
  • 750 ml Vegetable soup from soup cubes
  • 200 ml Cream
  • Lemon juice
  • Salt
  • white Pepper

Preparation (5 steps)

Chop carrots and onion

Cut 500 g peeled carrots and 2 medium-sized onion into coarse cubes. Place the diced carrots and onions in the mixing bowl and chop for 10 sec./speed 5.

Sauté vegetables

Add 2 tbsp butter to the chopped carrots and onions in the mixing bowl and sauté for 3 min./100°C/speed 3.

Cook soup

Add 750 ml vegetable soup (prepared from soup cubes) to the sautéed carrots and onions in the mixing bowl and cook for 15 min./100°C/speed 3. Leave the measuring cup on.

Purée soup

30 sec/Speed 10

Add 200 ml cream to the cooked soup in the mixing bowl and purée very finely for 30 sec./speed 10. Hold the lid firmly.

Season and mix soup

20 sec/Speed 5

Add a dash of lemon juice to the puréed soup in the mixing bowl and season with salt and white pepper. Then mix again briefly for 20 sec./speed 5.
