Description

These cocoa and oat pancakes are a delicious and nutritious alternative to classic pancakes. Perfect for a special breakfast or brunch, they are quick and easy to prepare with the Thermomix®. The oats give a soft texture and a rustic flavor, while the bitter cocoa adds an intense and chocolatey note. I love them garnished with fresh fruit, hazelnut cream and a touch of meringue for an explosion of flavors and textures. Ideal for an energetic awakening or an afternoon treat!

  • Sugar
  • Oat flakes
  • Milk
  • Cornstarch
  • Bitter cocoa
  • Baking powder
  • Salt
  • Butter
  • Hazelnut cream
  • Berries
  • Mint leaves
  • Meringues

Preparation of the dough

Eggs and sugar are poured into the bowl. Mix for 2 Min./Stufe 4 until a frothy mixture is obtained.

Addition of dry and liquid ingredients

30 sec/Speed 3

Add the oat flakes, bitter cocoa and milk to the bowl. Mix for 30 Sek./Stufe 3. Add the cornstarch, baking powder and a pinch of salt. Mix for another 20 Sek./Stufe 3.

Second addition of dry ingredients

Add the cornstarch, baking powder and a pinch of salt. Mix for another 20 Sek./Stufe 3.

Cooking the pancakes

Heat a non-stick pan. Melt a small amount of butter in the pan. Pour a portion of batter into the hot pan and cook for about 1 minute per side, until golden brown. Repeat until all the dough is used up.

Filling and decoration

Fill the pancakes with hazelnut cream, berries, meringues and mint leaves to taste.
