Description

These light crepes are perfect for a gourmet breakfast or a quick dessert. The recipe is simple and only requires a few basic ingredients. I like to prepare this recipe for a Sunday brunch or for a little sweetness during the week. The batter is light and airy, and the crepes are delicious with sugar, jam or chocolate. Letting the dough rest in the fridge makes for a better consistency. A real treat for the taste buds, and so easy to make with the Thermomix®!

Ingredients (5 ingredients)

  • 200 g flour
  • 2 piece eggs
  • 0.5 l milk
  • 1 packet vanilla sugar
  • 1 c. à c. vanilla powder

Preparation (6 steps)

Flour and eggs in the bowl

Put 200 g of flour and 2 eggs in the Thermomix bowl.

Mix the dough

Thermomix® Setting
20 sec/Speed 4

Mix 20 Sec./level 4 until the dough is smooth. Scrape the walls of the bowl with a spatula if necessary.

Resting the dough

Let the dough rest in the fridge for about 20 minutes. This allows the dough to relax and obtain a better consistency.

Add the milk and vanilla sugar

Add ½ l of milk and 1 sachet of vanilla sugar in the Thermomix bowl.

Mix the dough (2)

Thermomix® Setting
10 sec/Speed 3

Add 1 tsp of vanilla powder and mix 10 Sec./level 3 to incorporate all ingredients well.

Cooking crepes

Lightly oil a frying pan and heat it. Pour a ladle of dough into the pan and cook the crepe on each side until golden brown. Keep warm on a plate covered with a cloth.
