  • 2 piece medium sized zucchini
  • 200 g Feta cheese
  • 1 piece Egg
  • 100 g Breadcrumbs
  • 50 g grated Parmesan
  • 2 piece Garlic cloves, finely chopped
  • 1 tsp dried Oregano
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 2 tbsp fresh Parsley, chopped
  • Olive oil Drizzling

Preheat oven

Preheat the oven to 200°C (top/bottom heat).

Prepare baking sheet

Line a baking sheet with baking paper.

Prepare zucchini

Wash 2 medium-sized zucchini thoroughly, cut off the ends and grate coarsely. Place the grated zucchini in a sieve, sprinkle with 1 tsp salt and let stand for 10 minutes. Then squeeze out the liquid well.

Chop feta

Put 200 g Feta cheese into the mixing bowl and chop for 5 sec/speed 4.

Prepare the mixture

Place the prepared zucchini in a large bowl. Add the chopped feta. Then add 1 egg, 100 g breadcrumbs, 50 g grated Parmesan, 2 finely chopped garlic cloves, 1 tsp dried oregano, 1/2 tsp pepper and 2 tbsp fresh, chopped parsley. Mix everything thoroughly to form a homogeneous mass.

Form balls

Form small balls with your hands (approx. golf ball size) and place on the prepared baking sheet.

Bake balls

Drizzle the balls lightly with olive oil. Bake in the oven for 25–30 minutes until golden brown and crispy. Turn the balls carefully after half the baking time.
