Description

These nut crescents are a delicious yeast pastry, ideal for brunch or the Christmas season. The recipe combines a light dough with an aromatic hazelnut filling. Preparation takes about 2 hours, including the rising time of the dough. The recipe yields 12 servings and is of medium difficulty to prepare.

Ingredients (16 ingredients)

  • 500 g Flour
  • 175 ml Milk
  • 75 g Sugar
  • 1 Päckchen Dry yeast
  • 0.5 Würfel Yeast
  • 1 Stück Egg
  • 75 g Soft butter
  • 1 Prise Salt
  • 100 g Ground hazelnuts
  • 100 g Chopped hazelnuts
  • 1 TL Cinnamon
  • 50 g Sugar
  • 50 ml Milk
  • 75 g Butter
  • 1 Stück Egg yolk
  • 2 EL Milk

Preparation (8 steps)

Add flour, milk, sugar, dry yeast, egg, butter and salt to the mixing bowl

Add 500 g flour, 175 ml milk, 75 g sugar, 1 packet dry yeast or 1/2 cube yeast, 1 egg, 75 g soft butter and 1 pinch of salt to the mixing bowl.

Knead dough

Knead the dough for 2 min./kneading level.

Let the dough rise

Place the dough in a bowl, cover and let rise in a warm place for about 1 hour, until the volume has doubled.

Prepare filling

Add 100 g ground hazelnuts, 100 g chopped hazelnuts, 1 tsp cinnamon, 50 g sugar, 50 ml milk and 75 g butter to the mixing bowl.

Mix the ingredients for 20 sec./speed 3.

Shape nut crescents

Roll out the dough on a floured work surface and cut into 10-12 triangles. Spread each triangle with the filling and roll up from the wide side. Place the crescents on a baking sheet lined with baking paper.

Add 1 egg yolk and 2 tbsp milk to the mixing bowl and mix for 10 sec./speed 3.

Brush and bake nut crescents

Brush the crescents with the egg yolk-milk mixture and bake in a preheated oven at 180°C top/bottom heat for about 20 minutes.
