Description

This crumble cake with plum jam is a poem! I especially like to bake it in autumn when the plums are ripe. The buttery crumble base, the creamy sour cream filling and the fruity plum jam harmonize perfectly. A piece of cake with coffee - what more could you want? The recipe is a bit more complex, but it's worth it! If you like, you can add a few almond slivers over the crumbles. Tastes simply delicious and is perfect for birthdays or a cozy Sunday brunch.

Ingredients (10 ingredients)

  • 400 g Butter
  • 750 g Flour
  • 1 gestr. TL Baking powder
  • 400 g Sugar
  • 1 pinch Salt
  • 4 piece Eggs (Size M)
  • 500 g Sour cream
  • 2 Pck. Vanilla sugar
  • 2 piece Plum jam
  • Powdered sugar for dusting

Preparation (7 steps)

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Add 400 g butter to the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare crumble dough

Thermomix® Setting
10 sec/Speed 4

Add 750 g flour, 1 level tsp baking powder, 400 g sugar and 1 pinch of salt to the mixing bowl and mix for 10 sec./speed 4.

Add eggs and butter

Thermomix® Setting
2 min/Kneading speed

Add 2 eggs and the melted butter from the previous step and process into a crumble dough for 2 min./kneading stage.

Spread and press down crumbles

Grease a baking tray (approx. 32 x 39 cm; at least 3 cm deep). Spread approx. 2/3 of the crumbles as a base on the baking tray and press down.

Prepare sour cream filling

Thermomix® Setting
20 sec/Speed 3

Add 500 g sour cream, 2 eggs and 2 packs vanilla sugar to the mixing bowl and mix for 20 sec./speed 3.

Spread and top filling

Spread the sour cream mixture on the crumble base. Spread 2 (à 450 g) plum jam on top in thick dollops. Sprinkle the remaining crumbles over the top.

Bake

Bake in a preheated oven (electric oven: 200 °C/convection oven: 175 °C/ gas: level 3) for approx. 30 minutes. Let cool. Cut the cake into triangles and dust thickly with powdered sugar.
