Description

This assortment of raw vegetables is an explosion of freshness and colors, perfect as a light appetizer or healthy snack. Crunchy carrots, aromatic celery, delicate fennel, sweet peppers and spicy radishes combine with radicchio for a unique taste experience. The preparation is very simple and quick, ideal for a Sunday brunch or a summer dinner. The pinzimonio, with extra virgin olive oil, lemon juice, salt and pepper, enhances the natural flavors of the vegetables. A healthy and tasty alternative for those who love the authentic flavors of Mediterranean cuisine. Perfect for vegans and vegetarians!

Ingredients (11 ingredients)

  • 2 piece carrots
  • 4 piece celery ribs
  • 0.5 piece fennel
  • 1 piece small red peppers
  • 1 piece small yellow peppers
  • 100 g radishes
  • 5 foglie radicchio
  • extra virgin olive oil
  • lemon juice
  • black pepper
  • fine salt

Preparation (8 steps)

Preparation of the carrots

Peel 2 carrots and cut them into sticks, not too thick or too thin. Set aside.

Preparation of the celery

Top and tail 4 celery ribs and cut them into sticks. If the ribs are too hard and fibrous, peel them. Set aside.

Preparation of the fennel

Cut ½ fennel into thin slices. Set aside.

Preparation of the peppers

Top and tail 1 small red pepper and cut it in half lengthwise, then remove all the seeds and cut the slice into sticks. Repeat with 1 small yellow pepper. Set aside.

Preparation of the radishes

Take 100 radishes and top them in the upper part. If they are very large, cut them in half or into 4. Set aside.

Preparation of the radicchio

Take 5 radicchio leaves and cut them into not too thin strips. Set aside.

Emulsify the pinzimonio

Thermomix® Setting
20 Sec./Speed 3

Put extra virgin olive oil as needed, lemon juice as needed, black pepper as needed and fine salt as needed in the bowl and mix for 20 Sec./Stufe 3.

Serve

Arrange the vegetables in the aperitif glasses or in bowls or small plates. Serve with the oil and lemon emulsion.
