Description

These spiced molasses marshmallow muffins are a delightful treat, perfect for a cozy autumn morning or a festive Christmas gathering. The rich molasses flavor combined with warm spices creates a comforting aroma and taste. The addition of chocolate chips and miniature marshmallows adds a touch of sweetness and a fun, gooey texture. I've been making these for years, and they always disappear quickly! They're surprisingly easy to make, and the Thermomix® makes the process even smoother. These muffins are best enjoyed warm, straight from the oven, but they also keep well for a few days.

Ingredients (15 ingredients)

  • 2 cups light molasses
  • 2 cups brewed coffee
  • 2 piece eggs, lightly beaten
  • 5.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground allspice
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 cup shortening
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 cup miniature marshmallows

Preparation (10 steps)

Preheat oven and prepare muffin tins

Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 36 muffin cups. This step is done outside of the Thermomix.

Blend molasses, coffee, and eggs

Thermomix® Setting
20 sec/Speed 4

Add 2 cups light molasses, 2 cups brewed coffee, and 2 lightly beaten eggs to the Thermomix bowl. Mix for 20 Sec./Stufe 4 until smooth.

Combine dry ingredients

In a separate bowl, combine 5 ½ cups all-purpose flour, 2 teaspoons baking soda, 2 teaspoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground allspice, ½ teaspoon ground nutmeg, and ¼ teaspoon salt. This step is done outside of the Thermomix.

Cream shortening and sugar

Thermomix® Setting
30 sec/Speed 4

Add 1 cup shortening and 1 cup white sugar to the Thermomix bowl. Mix for 30 Sec./Stufe 4 until creamy.

Combine wet and dry ingredients

20 sec/Speed 3

Add the coffee mixture alternately with the flour mixture to the Thermomix bowl, mixing between each addition. Mix for 20 Sec./Stufe 3 after each addition, until batter is combined. Use the spatula to scrape down the sides of the bowl as needed.

Add vanilla extract

Thermomix® Setting
10 sec/Speed 3

Add 2 teaspoons vanilla extract to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to incorporate.

Fold in chocolate chips and marshmallows

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add 1 cup semisweet chocolate chips and 1 cup miniature marshmallows to the Thermomix bowl. Mix for 10 Sec./Linkslauf Stufe 2 to gently fold in the ingredients.

Fill muffin cups

Fill the prepared muffin cups about 3/4 full of batter. This step is done outside of the Thermomix.

Bake the muffins

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. This step is done outside of the Thermomix.

Cool and serve

Cool for 10 minutes before serving. This step is done outside of the Thermomix.
