Description

This recipe for goose legs with apple red cabbage is a true classic, especially comforting during the cold season. I love making it because it's so easy to prepare, yet results in a festive dish. The combination of the savory meat, the sweet and sour red cabbage, and the fruity apples is simply unbeatable. Preparing it in the Thermomix® makes it even easier and faster.   • 4 Stück Goose legs
  • 1 Prise Salt
  • 4 Stück Bread dumplings in a cooking bag
  • 1 Prise Pepper
  • 2 Stück Apples
  • 650 g Delicatessen Red Cabbage (drained weight)
  • 2 EL Wild lingonberries
  • 1 Stück Onion
  • 1 TL Cornstarch
  • 1 nach Bedarf Marjoram for garnish

Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Leave the chopped onion in the mixing bowl. Do not add any other ingredients. Sauté for 3 min./120°C/speed 1.

Add red cabbage and apples

Add the red cabbage (drained weight 650g) and the peeled, cored, and quartered apples to the mixing bowl. Chop for 5 sec./speed 4.

Cook red cabbage

Season the red cabbage with salt and pepper. Cook for 25 min./100°C/Reverse speed/speed 1.

Thicken sauce

Mix the cornstarch with a little cold water and add to the mixing bowl. Cook for 5 min./100°C/speed 2.

Stir in lingonberries

Add the wild lingonberries and stir in for 10 sec./Reverse speed/speed 1.

Prepare bread dumplings

While the red cabbage is cooking, prepare the bread dumplings in a cooking bag in a separate pot according to the package instructions.

Fry goose legs

Salt and pepper the goose legs. Fry in a pan with a little oil until golden brown on all sides.

Arrange the goose legs with the apple red cabbage and bread dumplings. Garnish with marjoram and serve.
