Description

  • 3 c à s oil
  • Olives or sunflower
  • Spices (black pepper, cinnamon, cumin)
  • Chickpeas
  • Radishes (optional)
  • 1 keine grouper

  • 3 keine carrots
  • 1 kg medium couscous

Preparation of the onions

Thermomix® Setting
5 min/248°F/Speed 1 120

Peel and cut the onions into thin slices. Place them in the Thermomix bowl with 3 tablespoons of olive or sunflower oil and spices (black pepper, cinnamon, cumin). Program 5 min/120°C/Stufe 1.

Cooking the vegetables

Thermomix® Setting
15 min/212°F/Speed 1 100

Once the onions are tender, add 1.5l of water (or more) to the Thermomix bowl and program 15 min/100°C/Stufe 1. Then add the carrots cut into rounds and the radishes (optional).

Preparation of the couscous

Put 1kg of medium couscous in a salad bowl. Add a little oil and 1/2 l of water. Work the couscous with your hands to separate the grains.

Steaming the couscous

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Put the prepared couscous in the Varoma. Fill the Thermomix bowl with 500ml of water. Place the Varoma on the Thermomix and program 20 min/Varoma/Stufe 1.

Aerate the couscous

After steaming, remove the couscous from the Varoma and work it by hand to separate the grains. Put the couscous back in the Varoma.

Cooking the fish

Thermomix® Setting
15 min/212°F/Speed 1 100 Reverse

Clean the grouper and the fish. Cut the fish into medium slices. Add the fish and chickpeas to the Thermomix bowl with the vegetables. Program 15 min/100°C/Stufe 1/Linkslauf.

End of cooking

Wait 15 minutes after the end of cooking to let the dish rest.

Service

Put the couscous in a special dish or a hollow dish and add enough sauce to garnish the vegetables and fish.
