Description

These pork olives with mustard sauce are a comforting and flavorful dish, perfect for a Sunday lunch or a weeknight dinner. The meat, tender and juicy, is enhanced by a creamy and slightly tangy sauce thanks to the mustard. I often prepare this dish when I want a simple but gourmet meal. The sauce is so good that you want to mop it up to the last drop! Accompanied by a homemade mashed potatoes, it is a real delight. This dish is quick to prepare and does not require many ingredients, making it an ideal option for weeknights.

Ingredients (8 ingredients)

  • 4 piece Pork Olives
  • 2 c. à s. Mustard
  • 10 cl Cream
  • 10 cl Veal Stock
  • 1 oignon Onion
  • 1 noisette Butter
  • 1 pinch Fine Salt
  • 1 pinch Pepper

Preparation (6 steps)

Onion preparation

Thermomix® Setting
3 sec/Speed 5

Peel the onion and cut it in half. Put the onion in the Thermomix bowl and chop for 3 Sec./Level 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the butter to the Thermomix bowl and sauté the onion for 3 Min./120°C/Level 1.

Brown the olives

Remove the onion from the bowl and set aside. Heat a knob of butter in a pan. Add the olives and brown them on all sides for about 5 minutes. Remove the olives from the pan and set aside.

Sauce preparation

Thermomix® Setting
10 sec/Speed 3

Put the reserved onion in the Thermomix bowl. Add the mustard, cream and veal stock. Salt and pepper lightly. Mix 10 Sec./Level 3.

Cooking the olives

Thermomix® Setting
10 min/212°F/Gentle stir speed 100 Reverse

Put the olives back in the Thermomix bowl. Cook in reverse mode 10 Min./100°C/Gentle Stirring Level.

Serve

Serve the olives hot with a homemade mashed potatoes.
