Description

This plum mascarpone dessert is a poem! The combination of fruity plums, creamy mascarpone and a hint of coffee is simply irresistible. I especially like to make it in the autumn when plums are in season. It is not only a real eye-catcher, but also a culinary highlight. The preparation is a little more complex, but it's worth it! If you like, you can sprinkle some freeze-dried fruit powder over it. A great dessert for special occasions or just because!

Ingredients (12 ingredients)

  • 500 g red Plums or Prune Plums
  • 200 ml Orange juice
  • 50 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 piece Cinnamon stick
  • 2 piece Egg yolks (Gr. M)
  • 50 g Icing sugar
  • 500 g Mascarpone
  • 120 ml cold Espresso or strong Coffee
  • 4 tbsp Dessert wine (e.g. Marsala)
  • 200 g Ladyfingers
  • 2 tsp freeze-dried red Fruit powder

Preparation (9 steps)

Prepare plums and cook syrup

Thermomix® Setting
10 min/212°F/Speed 1 100

Wash 500 g plums, halve, pit and cut into wedges. Add 200 ml orange juice, 50 g sugar, 1 pack vanilla sugar and 1 cinnamon stick to the mixing bowl and cook for 10 min./100°C/speed 1.

Remove plums and reduce syrup

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Remove the plums from the mixing bowl with a spatula and set aside. Cook the liquid for a further 10 min./Varoma/speed 1 without a measuring cup until syrupy, to obtain approx. 100 ml syrup.

Mix syrup and plums

Remove the cinnamon stick. Return the plums to the mixing bowl with the syrup and mix carefully with the spatula. Allow to cool.

Prepare egg yolk cream

Thermomix® Setting
5 min/Speed 4

Place 2 egg yolks and 50 g icing sugar in the mixing bowl and beat until creamy for 5 min./speed 4. Don't forget the spatula.

Stir in mascarpone

Thermomix® Setting
20 sec/Speed 3

Add 500 g mascarpone, 3 tbsp espresso and 1 tbsp dessert wine and stir in for 20 sec./speed 3.

Prepare espresso mix

Mix remaining espresso and dessert wine (3 tbsp) in a bowl.

Soak ladyfingers

Roughly break 200 g ladyfingers, turn half in the espresso mix.

Layer dessert

Divide the soaked biscuits into 4 glasses (à approx. 300 ml). Layer half of the cream, half of the plums and the remaining soaked biscuits on top.

Decorate dessert

Fill the remaining cream into a piping bag with a nozzle and pipe as dots onto the biscuit layer. Arrange the remaining plum wedges on top and dust with 2 tsp freeze-dried red fruit powder as desired.
