Description

This recipe for eggs in mustard sauce with Brussels sprouts is a hearty main course that is especially good in winter.   • 1 piece Onion
  • 20 g Butter
  • 20 g Flour
  • 200 ml Vegetable broth
  • 100 ml Milk
  • 2 tbsp Medium-hot mustard
  • 50 ml Cream
  • to taste Salt
  • to taste Pepper
  • to taste Sugar
  • 500 g Brussels sprouts
  • 4 piece Hard-boiled eggs

Preparation (9 steps)

Chop onions

Add 1 onion (approx. 100g), peeled, to the mixing bowl and chop for 3 sec./speed 5.

Add 20g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add 20g flour to the onions in the mixing bowl and sweat for 1 min./100°C/speed 1.

Deglaze with broth and milk

Add 200ml vegetable broth and 100ml milk to the mixing bowl and cook for 8 min./100°C/speed 2.

Add mustard and cream

Add 2 tbsp medium-hot mustard and 50ml cream to the mixing bowl and stir for 2 min./90°C/speed 2.

Season sauce

Season the sauce with salt, pepper and sugar and stir for 1 min./90°C/speed 2.

Prepare Brussels sprouts

While the sauce is cooking, clean and halve 500g Brussels sprouts and place in the Varoma container. Add 500ml water to the mixing bowl, attach the Varoma and cook for 20 min./Varoma/speed 1.

Peel and halve 4 hard-boiled eggs and add to the mustard sauce in the mixing bowl. Heat for 2 min./90°C/reverse speed speed 1.
