About this recipe

This chicken strips with asparagus and vegetables is a dish that we particularly enjoy at home in the spring. I still remember well how my grandma always insisted on using the first asparagus of the season, and this dish is a tribute to that tradition. It is a wonderful way to enjoy the fresh flavors of spring while preparing a quick and uncomplicated meal. The ingredients play a crucial role. The white asparagus, carefully peeled, brings a fine, slightly bitter note and a tender texture to the dish. Peas and carrots, in this case as frozen goods, provide sweetness and color. The chicken breast fillet, cut into fine strips and fried, provides the proteins and a savory component. The vegetable broth forms the basis for the sauce, while sour cream provides creaminess and a slight acidity. Curry powder brings a warm, exotic note that harmonizes wonderfully with the asparagus. The fresh parsley provides an aromatic freshness. When preparing in the Thermomix®, it is important to pay attention to the order of the ingredients. Sautéing the asparagus in olive oil is crucial to developing its aroma. The subsequent cooking with the peas and carrots ensures that the vegetables do not become too soft. When preparing the sauce, it is important to mix the flour well with the vegetable broth to avoid lumps. The reverse rotation when stirring in sour cream and chicken prevents the meat from falling apart. For a vegetarian version, the chicken can be replaced with tofu or Halloumi. For a vegan version, a plant-based cream alternative can be used instead of sour cream. Instead of curry powder, other spices such as turmeric, ginger or chili can be used to give the dish a different flavor. Rice, potatoes or pasta are excellent side dishes for this chicken strips. A fresh salad is also a good addition. If you like it a little more hearty, you can serve the dish with a piece of bread. Leftovers of the chicken strips can easily be stored in the refrigerator. They can be warmed up well the next day. The dish can also be prepared well in advance. Asparagus and vegetables can be cut the day before. The chicken can also be fried in advance. This significantly shortens the preparation time the next day.
