Description

This cockle pie is a traditional Spanish recipe that is always a success. The dough, made at home with the Thermomix®, is crunchy and tasty thanks to the touch of paprika. The filling, with canned cockles, caramelised onion and a touch of tomato, is juicy and full of flavour. Perfect for a family meal, an appetiser with friends or even to take on a picnic. Go ahead and prepare it, you will love it! You can use different types of seafood to vary the filling.

Ingredients (15 ingredients)

  • 200 g Water (for the dough)
  • 20 g Fresh bakery yeast (for the dough)
  • 30 g Extra virgin olive oil (for the dough)
  • 400 g Strong flour (for the dough)
  • 1 tbsp Sweet paprika (for the dough)
  • 1 tbsp Coarse salt (for the dough)
  • 300 g Onion
  • 50 g Extra virgin olive oil
  • 200 g Canned cockles
  • 1 tbsp Sweet paprika
  • 1 pinch Sugar
  • 1 tsp Salt
  • 60 g Tomato sauce
  • Fresh chopped parsley
  • 1 piece Beaten egg

Preparation (10 steps)

Dough preparation

Thermomix® Setting
2 min/99°F/Speed 2 37

Pour 200 g of warm water into the Thermomix bowl. Add 20 g of crumbled fresh yeast and program 2 Min./37°C/Stufe 2 to dissolve the yeast.

Add dry ingredients

Thermomix® Setting
3 min/Kneading speed

Add 400 g of strong flour, 1 level tbsp of salt and 1 tbsp of sweet paprika to the bowl. Program 3 Min./Knetstufe to knead the dough.

Add oil and knead

Thermomix® Setting
2 min/Kneading speed

Add 30 g of extra virgin olive oil to the bowl and program 2 Min./Knetstufe to integrate the oil and obtain a smooth dough.

Dough resting

Remove the dough from the bowl, form a ball and place it in a bowl lightly greased with oil. Cover with a clean kitchen towel and let it rest in a warm, draught-free place until it doubles in volume (approximately 1 hour).

Onion preparation

Thermomix® Setting

Put 300 g of onion in quarters in the Thermomix bowl and program 3 Sek./Stufe 5 to chop it. Lower the remains from the walls of the bowl with the spatula.

Sautéing the onion

Add 50 g of extra virgin olive oil to the bowl with the chopped onion. Program 8 Min./120°C/Stufe 1 to sauté the onion until golden brown.

Add tomato and spices

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 60 g of tomato sauce, 1 tbsp of sweet paprika, 1 pinch of sugar and 1 tsp of salt to the bowl. Program 3 Min./100°C/Stufe 1 to cook the sauce.

Mix the filling

Pour the sofrito into a large bowl. Add 200 g of drained canned cockles and fresh chopped parsley to taste. Stir and let the mixture cool slightly.

Pie assembly

Preheat the oven to 180 ºC. Place the dough on a greased surface and roll it out with a rolling pin. Cut the dough in half and line a mould with one of the parts. Fill with the cockle mixture and cover with the remaining dough, making an edge to prevent it from opening.

Paint and bake

Beat 1 egg and with a kitchen brush, spread all over the top of the dough. Make a small hole in the centre and bake the pie at 180 ºC for about 45 minutes or until golden brown.
