Description

These tuna empanadas are a classic that never fails. The combination of tuna with onion, pepper and hard-boiled egg makes them irresistible. Perfect for a quick meal, a picnic or as an appetizer at a party. The recipe is very simple and with the Thermomix® it is prepared in the blink of an eye. I make them often for my children and they always triumph. Go ahead and try them, you'll love them! You can use different types of pepper to give it a touch of color and different flavor. They are delicious both cold and hot!

Ingredients (12 ingredients)

  • 1 can canned tuna
  • 1 piece onion
  • 0.5 piece pepper
  • 1 piece hard-boiled egg
  • 25 gramos black olives
  • 1 tbsp olive oil
  • 12 piece empanada discs
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch turmeric
  • 1 pinch sweet paprika
  • 2 tbsp breadcrumbs

Preparation (7 steps)

Chop the onion and pepper

Thermomix® Setting

Peel the onion and cut into quarters. Wash the pepper, remove the seeds and cut into pieces. Put the onion in the Thermomix® bowl and chop 3 sec./Stufe 5. Remove and reserve. Put the pepper in the Thermomix® bowl and chop 3 sec./Stufe 5. Remove and reserve.

Sauté the onion and pepper

Pour the olive oil into the Thermomix® bowl. Add the chopped onion and pepper and sauté 5 Min./120°C/Stufe 1.

Mix the filling

Thermomix® Setting
10 sec/Speed 3/Linkslauf Reverse

Add the drained tuna, salt, pepper, turmeric and sweet paprika to the Thermomix® bowl. Mix 10 Sek./Stufe 3/Linkslauf.

Add egg and olives

Thermomix® Setting
5 sec/Speed 2/Linkslauf Reverse

Add the chopped hard-boiled egg and chopped black olives to the Thermomix® bowl. Mix 5 Sek./Stufe 2/Linkslauf.

Cool the filling

Pour the filling into a bowl and let it cool in the refrigerator for 30 minutes.

Fill the empanadas

Preheat the oven to 200°C. Place the empanada discs on the counter and place a portion of filling on each of them. Moisten the edge of half of the dough, join to close and make a crimp.

Bake the empanadas

Place the empanadas on a baking sheet sprinkled with breadcrumbs. Bake for 15 minutes or until golden brown.
