Diese Chicken Enchiladas sind ein absoluter Hit für jede Party oder ein gemütliches Abendessen mit der Familie! Die cremige Sauce, kombiniert mit der würzigen Hähnchenfüllung, macht dieses Gericht zu etwas Besonderem. Ich mache sie immer, wenn ich viele hungrige Mäuler zu stopfen habe, und sie sind jedes Mal im Nu verputzt. Die Zubereitung ist zwar etwas aufwendiger, aber es lohnt sich definitiv! Man kann die Enchiladas auch super vorbereiten und dann einfach in den Ofen schieben, wenn die Gäste da sind. Probiert es aus, ihr werdet begeistert sein!

Ingredients (17 ingredients)

  • 1 tablespoon vegetable oil
  • 1 piece small onion, diced
  • 1 piece small red bell pepper, diced
  • 2 can chicken breast chunks, drained
  • 1.25 ounce taco seasoning
  • 10.75 ounce condensed cream of chicken soup
  • 10 ounce diced tomatoes and green chiles
  • 0.5 cup plain Greek yogurt
  • 0.25 cup milk
  • 0.25 cup green (mild) hot pepper sauce
  • 1 tablespoon lime juice
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground cumin
  • 10 piece flour tortillas
  • 1 cup Cheddar cheese

Preparation (6 steps)

Sauté onion and bell pepper

Heat vegetable oil in a skillet over medium-high heat. Add diced onion and bell pepper; cook and stir until onion has browned, about 5 minutes. Set aside.

Prepare chicken filling

Add drained chicken breast to the skillet and flake it apart with a fork. Stir in taco seasoning and cook until vegetables have softened, 3 to 5 minutes. Set aside.

Prepare creamy sauce

Add condensed cream of chicken soup, diced tomatoes and green chiles, plain Greek yogurt, milk, hot pepper sauce, lime juice, dried oregano, chili powder, garlic powder, and ground cumin to the Thermomix bowl. Cook for 10 min/90°C/speed 2.

Preheat oven

Preheat the oven to 375 degrees F (190 degrees C).

Assemble enchiladas

Wrap chicken mixture in flour tortillas and arrange in a 9x13-inch baking pan. Pour sauce on top and sprinkle with Cheddar cheese.

Bake enchiladas

Bake in the preheated oven until cheese is golden brown, about 30 minutes.
