Description

This Asian glass noodle salad is a real blast! The crunchy carrots, peppers and cucumbers harmonize perfectly with the delicate glass noodles. The dressing made from soy sauce, lime juice and sesame oil gives the salad a wonderfully fresh note. I love how quick and easy this salad is to prepare - ideal for a quick lunch or as a side dish for grilling. If you like, you can add some chili to give the salad a slight spiciness. An absolute must for anyone who loves Asian cuisine!

Ingredients (13 ingredients)

  • 100 g Glass noodles
  • 200 g Carrots
  • 1 piece red bell pepper
  • 2 piece Mini cucumbers
  • 3 piece Spring onions
  • 4 tbsp Peanuts - for garnish
  • 1 clove Garlic clove
  • 3 tbsp Soy sauce
  • 1 piece Lime - squeezed
  • 2 tbsp Sesame oil
  • 2 tbsp Maple syrup
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Prepare vegetables

Peel the carrots and put them in the mixing bowl. Chop 3 sec./speed 5. Clean the bell pepper, core it and cut it into strips. Cut mini cucumbers into slices. Cut spring onions into rings. Pour boiling water over glass noodles and let stand for 5 minutes. Then drain well and cut into small pieces with scissors.

Chop garlic

Put garlic clove in the mixing bowl and chop 3 sec./speed 7.

Prepare dressing

Thermomix® Setting
10 sec/Speed 3

Add soy sauce, lime juice, sesame oil and maple syrup to the mixing bowl. Stir 10 sec./speed 3. Season with salt and pepper.

Mix salad

Put all salad ingredients (glass noodles, carrots, bell pepper, cucumbers, spring onions) in a bowl and mix with the dressing from the mixing bowl.

Serve

Garnish glass noodle salad with peanuts and serve.
