Description

This bulgur salad is a real all-rounder! I especially like to make it in the summer because it is so fresh and light. The bulgur is covered with boiling water and then swells up wonderfully. Together with crunchy vegetables such as bell peppers, tomatoes and spring onions, it becomes a delicious salad. The dressing made from olive oil, tomato paste, honey and lemon juice gives the salad a special touch. It tastes good as a side dish for grilling as well as a light main meal. And the best thing: It can be prepared very well and tastes almost even better the next day!

Ingredients (13 ingredients)

  • 250 g Bulgur, uncooked
  • 450 ml Water, boiling hot
  • 3 piece Spring onions
  • 2 piece Tomatoes
  • 2 piece Bell pepper, red, small (approx. 150 g each)
  • 1 piece Onion, red
  • 10 g Parsley, finely chopped
  • 6 tbsp Olive oil
  • 50 g Tomato paste
  • 2 tsp Honey
  • 2 tbsp Lemon juice, fresh
  • to taste Salt
  • to taste Cayenne pepper

Preparation (5 steps)

Prepare bulgur

Place 250g bulgur and 450ml boiling water in a bowl. Add 1/2 tsp salt, stir and let it swell for 10-15 minutes. If there is still water left after soaking, scoop it off.

Prepare vegetables

Wash 2 red bell peppers (approx. 150g per pepper) and cut into small cubes. Wash 2 tomatoes, core and dice. Cut 3 spring onions into fine rings. Cut 1 red onion into fine cubes. Wash, dry and finely chop 10g parsley.

Prepare dressing

Thermomix® Setting

Put 6 tbsp olive oil, 50g tomato paste, 2 tsp honey, 2 tbsp lemon juice, salt and cayenne pepper in the mixing bowl and mix for 10 sec./speed 3.

Mix dressing with bulgur

Add the dressing from the mixing bowl to the soaked bulgur and mix well. Season with salt, cayenne pepper and lemon juice.

Mix in vegetables

Add the prepared bell peppers, tomatoes, spring onions, red onion and parsley to the bulgur and mix well.
