Description

This colorful pasta salad with its fruity mango note is an absolute highlight for every barbecue party or a quick lunch. I especially like to make it in the summer when you want something light and refreshing. The combination of crunchy bell pepper, spicy leek and sweet corn, rounded off with a hint of curry and Chinese spice, makes it a real taste experience. The recipe is super easy and quick to prepare, so you have more time for other things. If you like it a little spicier, you can add a pinch of chili. A true all-rounder that is always well received!

Ingredients (10 ingredients)

  • 250 g Pasta
  • 1 piece Bell pepper green
  • 1 piece Bell pepper red
  • 1 Stange Leek
  • 1 can Corn
  • 1 Glas Mango chutney
  • 1 kl. Glas Salad cream
  • 1 kl. Glas Soy sauce
  • 1 tsp Curry powder
  • 1 tsp Spice mix Chinese spice

Preparation (4 steps)

Cook pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 500 ml water to the mixing bowl and bring to a boil for 10 min./100°C/speed 1. Add 250 g pasta through the lid opening and cook according to package directions without the measuring cup. Then drain through the simmering basket and put in a salad bowl.

Prepare bell peppers and leek

Clean 1 green bell pepper and 1 red bell pepper and cut into cubes. Wash 1 leek and cut into rings. Drain 1 can of corn.

Mix salad

Add the diced bell peppers, leek rings and corn together with the cooked pasta to the salad bowl and mix.

Prepare and mix in dressing

In a separate bowl, stir together 1 small jar of salad cream, 1 jar of mango chutney, 1 shot glass of soy sauce, 1 tsp of curry powder and 1 tsp of Chinese spice. Pour the dressing over the salad and mix well.
