Description

This chicken salad with vegetables is a recipe I often prepare in summer. It is fresh, nutritious and very easy to make with the Thermomix®. The chicken breast is juicy and tender, and the combination of carrots, potatoes, peas and corn gives it a sweet and crunchy touch. Mayonnaise and mustard give it the perfect finishing touch. It is ideal for a light lunch, a quick dinner or to take on a picnic. My friends and family love it! Also, it can be prepared in advance and stored in the fridge.

Ingredients (9 ingredients)

  • 1 piece chicken breast
  • 3 tazas potato cut in cubes
  • 2 tazas carrots cut in cubes
  • mayonnaise
  • mustard
  • salt
  • pepper
  • peas or green peas
  • corn

Cooking the chicken breast

Thermomix® Setting
25 min/212°F/Giro inverso/Velocidad cuchara 100 Reverse

Place the chicken breast in the Thermomix® bowl. Add water to cover the breast and a pinch of salt. Program 25 Min./100°C/Reverse rotation/Spoon speed.

Shred the chicken

Once the breast is cooked, remove it from the bowl and let it cool. Shred the breast into small pieces with your hands or with two forks. Reserve.

Preparation of vegetables

Thermomix® Setting
20 min/Varoma/Velocidad 1 Varoma

Peel and cut the carrots and potatoes into small cubes. Place the carrots, potatoes, peas (green peas) and corn in the simmering basket. Fill the bowl with 1 liter of water and a pinch of salt. Insert the simmering basket into the bowl. Program 20 Min./Varoma/Speed 1.

Mixing ingredients

Once the vegetables are cooked, remove them from the simmering basket and let them cool a little. In a large bowl, combine the shredded chicken and cooked vegetables.

Dressing and refrigeration

Add mayonnaise and mustard to taste to the bowl with the chicken and vegetables. Mix well until all components are combined. Season with salt and pepper to taste. Refrigerate the salad for at least 30 minutes before serving.
