Description

This peanut-cookie-cake is an absolute eye-catcher on any coffee table! The crispy cookie base with peanut pieces harmonizes perfectly with the creamy yogurt filling and the salty peanut caramel. I especially like to make this cake when guests come over, as it can be prepared very well in advance and can soak nicely in the refrigerator. The combination of sweet, salty and creamy is simply irresistible. A great recipe for all peanut lovers!

Ingredients (13 ingredients)

  • 200 g Butter biscuits
  • 2 piece Snickers bars (à 40 g)
  • 100 g Butter
  • 500 g Cream cheese
  • 300 g Plain yogurt
  • 2 tbsp Peanut butter
  • 1 Msp. Bourbon vanilla
  • 120 g Icing sugar
  • 1 Pck. Cream stiffener
  • 1 Prise(n) Salt
  • 100 g Peanuts (roasted and salted)
  • 50 g Sugar
  • 50 ml Cream

Preparation (9 steps)

Chop butter biscuits

Thermomix® Setting
10 sec/Speed 8

Put 200 g butter biscuits into the mixing bowl and chop for 10 sec./level 8. Then transfer.

Chop Snickers bars

Thermomix® Setting
5 sec/Speed 5

Put 2 Snickers bars (à 40 g) into the mixing bowl and chop for 5 sec./level 5. Then transfer.

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 100 g butter into the mixing bowl and melt for 3 min./50°C/level 2.

Prepare biscuit base

Thermomix® Setting
20 sec/Speed 3

Add the chopped butter biscuits and the chopped Snickers bars to the melted butter in the mixing bowl and mix for 20 sec./level 3. Place the mixture in a greased springform pan (26 cm Ø) and press into a firm base with your fingers.

Prepare cream

Thermomix® Setting
30 sec/Speed 4

Put 500 g cream cheese, 300 g plain yogurt, 2 tbsp peanut butter, 1 pinch Bourbon vanilla, 120 g icing sugar, 1 packet cream stiffener and 1 pinch of salt in the mixing bowl and stir for 30 sec./level 4.

Spread cream and chill

Spread the cream on the Snickers biscuit base. Place the cake in the refrigerator for at least 4 hours.

Chop peanuts

3 sec/Speed 5

Put 100 g peanuts (roasted and salted) into the mixing bowl and chop for 3 sec./level 5. Then transfer.

Prepare caramel sauce

Thermomix® Setting
10 min/248°F/Speed 1 120

Put 50 g sugar and 20 ml water in the mixing bowl and caramelize for 10 min./120°C/level 1 without a measuring cup. Then add 50 ml cream and stir for 1 min./90°C/level 2.

Decorate cake

Before serving, sprinkle the Snickers cake with the chopped peanuts and drizzle with the caramel sauce.
