Description

These chicken escalopes with tomato and olives are a simple and tasty dish, perfect for a quick weeknight meal. I love the combination of tender chicken with the tomato sauce flavored with oregano and olives. It's a dish I make often, because it's easy to make and pleases the whole family. The olive paste brings an irresistible Mediterranean touch. Serve with fresh pasta or a green salad for a complete and balanced meal. A real delight in all simplicity!

Ingredients (9 ingredients)

  • 200 g Chicken breast
  • 8 g White flour
  • 15 ml Olive oil
  • 1 gousse(s) Garlic
  • to taste Salt
  • to taste Pepper
  • 130 g Canned tomato(es)
  • 16 g Olive paste
  • 0.4 g Dried oregano

Preparation of the escalopes

Flatten and tenderize the chicken escalopes by beating them with a mallet or flat-bottomed pounder. Make a few small incisions around the edge to prevent them from curling up during cooking. Lightly flour the escalopes, if desired, to obtain a slightly thicker sauce. Remove excess flour.

Put the garlic clove in the Thermomix bowl and chop finely for 3 Sek./Stufe 7.

Cooking the garlic in oil

Add the olive oil to the bowl with the chopped garlic and cook for 3 Min./120°C/Stufe 1.

Cooking the escalopes (in the pan)

Heat a frying pan over medium heat. Fry the escalopes for 2 minutes on each side. Salt and pepper. Remove the escalopes from the pan and keep them warm in the oven.

Tomato sauce preparation

Thermomix® Setting
5 min/212°F/Speed 2 100

Put the canned tomatoes, olive paste and dried oregano in the Thermomix bowl. Cook everything for 5 Min./100°C/Stufe 2.

Finalization and service

2 min/212°F/Linkslauf Speed 1 100 Reverse

Put the escalopes back into the Thermomix bowl with the tomato sauce. Cook for about 2 Min./100°C/Linkslauf Stufe 1, turning gently once with the spatula. Serve immediately.
