Description

This simple, yet incredibly aromatic pasta dish is an absolute favorite of mine! The combination of almonds, basil and cheese creates a pesto that simply tastes delicious. Preparation with the Thermomix® is super quick and easy. Perfect for a quick lunch or a light dinner. I love to sprinkle a few roasted almond flakes over it, which gives it a great crunch. And if you like it a little creamier, you can mix a spoonful of ricotta into the pesto. A real treat that is on the table in no time!

Ingredients (10 ingredients)

  • 160 g pasta
  • 100 g almonds
  • 10 g basil
  • 50 g grated cheese
  • 1 q.b. lemon zest
  • 50 ml olive oil
  • 1 q.b. fine salt
  • 1 q.b. almond slivers
  • 1 q.b. basil
  • 1 q.b. olive oil

Preparation (6 steps)

Prepare almonds, basil and cheese

Place 100 g almonds, 10 g basil, 50 g grated cheese, lemon zest and a pinch of salt into the mixing bowl.

Prepare pesto

Process the ingredients into a pesto for 20 sec/speed 8. Use the spatula to scrape everything down from the edge. Then add 50 ml olive oil and mix for another 10 sec/speed 4.

Mix the pesto for another 10 sec/speed 4.

Cook pasta

Meanwhile, cook 160 g pasta in plenty of salted water according to the package instructions.

Mix pasta with pesto

Drain the pasta, collecting some of the cooking water. Place the pasta in a bowl, add the pesto and mix with a little cooking water until a creamy consistency is achieved.

Serve

Serve the pasta with almond flakes, fresh basil and a drizzle of olive oil.
