Description

This creamy spaghetti dish with burrata and roasted tomatoes sauce is a true Mediterranean delight. The burrata, with its creamy heart, melts with the roasted tomatoes to create a rich and flavorful sauce. I always use cherry tomatoes for a sweeter touch, but plum tomatoes also work wonderfully. The preparation is simple and quick, ideal for a weekday meal or a special brunch. A vegetarian dish that everyone will love! Also, you can add a little fresh basil for an even more intense aroma. Enjoy!

Ingredients (9 ingredients)

  • 1 bandeja cherry tomatoes
  • 1 piece medium or small garlic head
  • 1 bola burrata cheese
  • 1 pack whole spaghetti
  • 1 bunch fresh coriander or parsley
  • 1 piece parmesan cheese
  • 1 piece Modena vinegar
  • 1 piece salt
  • 1 piece pepper

Preparation (5 steps)

Roast the tomatoes and garlic

Preheat the oven to 180°C. Place the cherry tomatoes (or plum tomatoes cut in half) and the head of garlic (with the heart removed) on a baking sheet. Season with salt, pepper and a drizzle of oil. Bake for 30 minutes.

Cook the pasta

212°F/Speed 1 100

While the tomatoes are roasting, fill the Mixtopf with water and bring to a boil. Add salt and the spaghetti package. Cook according to package instructions. Drain the pasta, reserving a glass of the cooking water.

Prepare the burrata sauce

30 sec/Speed 8

Once the tomatoes and garlic are roasted, pour them into the Mixtopf. Add the ball of burrata cheese, a handful of fresh coriander (or parsley), half a teaspoon of salt, a little pepper, a splash of Modena vinegar and half a glass of the pasta cooking water. Chop 30 seconds/Stufe 8.

Mix the pasta with the sauce

Thermomix® Setting
2 min/140°F/Gentle stir speed 60 Reverse

Pour the sauce over the pasta in a pot. Heat over low heat for 2 minutes/60°C/Sanftrührstufe, stirring gently to integrate the sauce with the pasta.

Serve

Serve the pasta hot. Sprinkle with grated parmesan cheese and oregano.
