  • 200 g Spelt Spaghetti
  • 250 g Piccola Tomatoes, halved
  • 1 piece small Zucchini, finely sliced
  • 1 Handvoll Spinach
  • 1 piece small Onion, thinly sliced
  • 1.5 piece Garlic cloves, finely chopped
  • 0.5 piece Chili (optional), finely chopped
  • 1 pack Cream cheese
  • 2 tsp Herb Sea Salt
  • 550 ml Water
  • Mozzarella
  • Basil
  • Olive oil

Add 250 g Piccola tomatoes, halved, 1 small zucchini, finely sliced, 1 handful of spinach, 1-2 garlic cloves, finely chopped, ½ chili (optional), finely chopped, 1 pack of cream cheese, 2 tsp herb sea salt and approx. 500-600ml water to the mixing bowl and cook for 10-12 min./100°C/speed 1.

Add 200 g spelt spaghetti to the mixing bowl and make sure that the spaghetti is covered with liquid by at least 1 cm. If necessary, add some more water. Cook for 10-12 min./100°C/speed 1.

About this recipe

This dish is a kind of culinary safe haven for me when time is short and the fridge isn't exactly overflowing with ideas. It is a variation of simple pasta dishes that I cooked as a student, just with an upgrade thanks to the Thermomix® and a focus on healthier ingredients. The spelt spaghetti gives the whole thing a slightly nutty note that goes well with the vegetables. The list of ingredients is deliberately kept simple, but each component plays an important role. The Piccola tomatoes, halved, give sweetness and acidity, the zucchini provides a pleasant texture and freshness, while the spinach contributes a healthy dose of vitamins and a slightly earthy note. The onion and garlic form the aromatic base, and the chili, if used, provides a small kick. The cream cheese is the secret to a creamy sauce without the need for cream or other heavy ingredients. The herb sea salt rounds the whole thing off and provides the right seasoning. The preparation in the Thermomix® is very simple. First, the onion is chopped, which is done in a flash in the Thermomix®. Then add the remaining vegetables, along with the cream cheese, herb sea salt and water. It is important to adjust the amount of water to the amount of vegetables. There should be enough liquid to cover the spaghetti later. After the vegetables have cooked, the spelt spaghetti are added. Here it is crucial to make sure that the spaghetti is covered with liquid by at least 1 cm. If necessary, add some more water. The cooking time depends on the thickness of the spaghetti. It is best to try them after 10 minutes and extend the cooking time by a few minutes if necessary. For a vegetarian option, the cream cheese can be replaced with a vegan alternative. If you like it a little spicier, you can add dried herbs such as oregano or thyme. A dash of lemon juice at the end can also give the dish a fresh note. The dish is best served immediately when the spaghetti are still nice and al dente. Although the recipe excludes mozzarella and basil, you can of course still sprinkle some grated Parmesan over it if you like. A fresh salad goes well with it. Leftovers can be stored in the refrigerator and reheated the next day. However, the spaghetti should no longer be completely al dente, otherwise they will become too soft when reheated. You can also prepare the dish well by cutting the vegetables the day before and storing them in the refrigerator. This saves even more time the next day.
