Description

With the Thermomix®, these hazelnut corners with chocolate glaze are a breeze to make. The main ingredients are margarine, sugar, eggs, flour, and hazelnuts. Preparing the cookies takes about 90 minutes and yields 24 servings. Ideal as finger food and dessert for festive occasions, especially during the Christmas season.   • 125 g Margarine (at room temperature)
  • 200 g Margarine (at room temperature)
  • 125 g Granulated sugar
  • 2 Päckchen Vanilla sugar
  • 2 Eggs
  • 300 g Flour
  • 1 TL Baking powder
  • 6 EL Apricot jam
  • 200 g Brown sugar
  • 400 g Grated nuts (e.g. a mix of hazelnuts and almonds)
  • 200 g Chocolate glaze

Preparation (10 steps)

Mix margarine, sugar, and vanilla sugar

30 sec/Speed 4

Place 125 g margarine (at room temperature), 125 g granulated sugar, and 1 packet of vanilla sugar into the mixing bowl and mix for 30 sec/speed 4.

Add eggs and mix

Add 2 eggs and mix for another 20 sec/speed 4.

Mix flour and baking powder and stir in

Add 300 g flour and 1 tsp baking powder to the mixing bowl and stir in for 30 sec/speed 4. If necessary, scrape down the sides with the spatula and mix again for 10 sec/speed 4.

Spread dough on baking sheet

Remove the dough from the mixing bowl and press evenly onto a deep baking sheet lined with baking paper.

Spread jam over the dough

Thinly spread 6 tbsp apricot jam over the dough.

Prepare nut mixture

Place 200 g margarine (at room temperature), 200 g brown sugar, 1 packet of vanilla sugar, and 5 tbsp water in the mixing bowl and heat for 5 min/80°C/speed 2 until the sugar has dissolved.

Stir in nuts

Add 400 g grated nuts (e.g. a mix of hazelnuts and almonds) and stir in for 20 sec/Reverse speed/speed 2.

Spread nut mixture and bake

Spread the nut mixture evenly over the jam layer. Preheat the oven to 180 °C (convection oven: 160 °C). Place the baking sheet in the preheated oven and bake for 30-35 minutes.

Cool and cut

Let the cake cool on the baking sheet. Then cut into nut corners (e.g. cut 3 horizontal and 5 vertical rows and halve the resulting pieces).

Prepare chocolate glaze and decorate nut corners

Prepare 200 g chocolate glaze according to the package instructions. Dip the tips of the nut corners into the glaze and let them harden on baking paper.
