Description

This tomato essence is a refreshing and flavorful dish, perfect for a light summer meal. Ingredients (12 ingredients)

  • 2.5 kg cherry vine-ripened tomato
  • 1 stick celery
  • 1 piece small shallot
  • 1 clove small garlic clove
  • 2 sprigs thyme
  • 4 leaves tarragon
  • 2 pinches cayenne pepper
  • 5 drops Worcestershire sauce
  • 3 drops Tabasco sauce
  • 4 piece basil
  • 6 piece large plum vine tomatoes
  • to taste good-quality extra-virgin olive oil

Preparation (4 steps)

Marinating the Tomatoes

In a large bowl, mix 2 ½ kg cherry vine-ripened tomatoes, 1 stick celery, 1 small shallot, 1 small garlic clove, 2 sprigs thyme, 4 leaves tarragon, 2 pinches cayenne pepper, 5 drops Worcestershire sauce, 3 drops Tabasco sauce, 4 basil leaves, 6 large plum vine tomatoes, and 1 tbsp sea salt together. Cover with cling film and marinate for 6 hours.

Chopping the Tomato Mixture

Place the marinated tomato mixture into the Thermomix bowl in batches. Pulse until roughly chopped, being careful not to over-chop into a mush. Use the following setting for each batch: 3 Sec./Stufe 4.

Extracting the Tomato Essence

Place three layers of muslin cloth, or a new kitchen cloth, over a large bowl and pour the chopped tomato mix into the cloth. Tie up with string and hang in a cold place for at least 15 minutes over the bowl to collect the tomato essence. Set aside the pulp.

Seasoning and Chilling

Taste the tomato essence and correct the seasoning with salt and pepper, if necessary. Then, cool in the fridge for at least 1 hour.
