Description

This simple, yet incredibly delicious pasta dish is perfect for a quick lunch or a light dinner. The creamy lemon sauce coats the fettuccine, providing a refreshing taste experience. I often make these pastas with lemon when I need something quick and still want to put something special on the table. Preparation in the Thermomix® is child's play and saves time. A touch of freshly grated lemon zest gives the dish a special touch. If you like, you can sprinkle some freshly grated Parmesan on top. Enjoy your meal!

Ingredients (7 ingredients)

  • 250 g fettuccine
  • 1 piece egg yolk
  • 30 cl liquid cream
  • 15 g butter
  • 1 cuillère shallot
  • 1 c. à c. finely grated lemon zest
  • Mill pepper

Preparation (6 steps)

Chop shallot

Thermomix® Setting
3 sec/Speed 5

Put 1 peeled shallot in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté shallot

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 15 g of butter and sauté for 3 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 30 cl liquid cream, 1 egg yolk, lemon zest and pepper and cook for 5 min./90°C/speed 2.

Cook pasta

In the meantime, cook 250 g of fettuccine in a separate pot with salted water according to package instructions.

Mix pasta and sauce

Thermomix® Setting
1 min/Speed 2/Linkslauf Reverse

Drain the cooked pasta and add it directly to the mixing bowl with the sauce. Mix everything for 1 min./speed 2/reverse.

Serve

Serve the pastas with lemon immediately. Sprinkle with freshly ground pepper as desired.
