Description

This fish fillet, enhanced by a fresh and colorful tomato and pepper sauce, is a light and tasty summer dish. I have been preparing this recipe for years, and it is always a hit at home. The sauce, prepared in the blink of an eye in the Thermomix®, brings an irresistible Mediterranean touch. Perfect for a sunny lunch or a light dinner, this dish is a great way to enjoy the flavors of summer. Feel free to vary the herbs according to your tastes to further personalize this simple and delicious recipe.

Ingredients (8 ingredients)

  • 4 piece Pollock paving stones
  • Salt
  • 1 c à s Lemon juice vinegar
  • 2 c à s Olive oil
  • 2 branches Parsley
  • Basil
  • 1 piece Tomato
  • 1 piece Pepper

Preparation (5 steps)

Salted fish and set aside

Salt the pollock paving stones and set aside for 15 minutes. No action is performed in the Thermomix at this stage.

Sauce preparation

Thermomix® Setting
10 sec/Speed 3

Pour the lemon juice vinegar, salt, a little Espelette pepper and a little pepper into the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Adding oil and herbs

Thermomix® Setting
5 sec/Speed 2

Add the olive oil, parsley and chopped basil to the Thermomix bowl. Mix for 5 Sek./Stufe 2.

Vegetable preparation

Remove the stalk from the tomato, cut the pepper and tomato into dice. Add the diced tomato and pepper to the Thermomix bowl. Mix gently with a spatula. No action is performed in the Thermomix at this stage.

Cooking the fish on the griddle

Heat the griddle. Add a drizzle of olive oil and place the fish skin side down. Cook for 3 minutes on each side. This step is done on the griddle and not in the Thermomix.
