Description

Filo dough flowers with vegetables are a vegetarian finger food that is easy to prepare with the Thermomix®. The main ingredients are filo dough, celeriac, beetroot, zucchini and sweet potato. Preparation takes about 60 minutes and yields 12 servings. The recipe is ideal as a snack for parties or as a festive appetizer, especially in winter.

  • 4 Blätter Filo dough (frozen)
  • 0.25 Celeriac
  • 1 Kugel(n) Beetroot
  • 1 Zucchini
  • 0.5 Sweet potato
  • 1 Garlic clove
  • 1 Red onion
  • 2 Eggs (size M)
  • 150 g Sour cream
  • 50 g Grated Parmesan
  • Salt
  • Pepper
  • Nutmeg
  • 100 g Butter

Preparation (7 steps)

Prepare vegetables

Let the filo dough thaw. Wash the celeriac, beetroot, zucchini and sweet potato, peel if necessary, and cut into thin slices. Briefly blanch the vegetables so that they are easier to shape. Blanching is done outside of the Thermomix.

Chop garlic and onion

Peel 1 clove of garlic and 1 red onion and place in the mixing bowl. Chop for 3 sec./level 7.

Prepare cream

Add 2 eggs (size M), 150 g sour cream, 50 g grated Parmesan, salt, pepper and nutmeg to the mixing bowl with the garlic and onion. Stir for 20 sec./level 3.

Melt butter

Put 100 g butter in the mixing bowl and melt for 3 min./50°C/level 1, letting it brown a little.

Prepare filo dough

Spread out the filo dough and use a knife to cut 36 squares (approx. 10 x 10 cm). Remove the melted butter from the mixing bowl and brush the dough pieces with it. Stack 3 dough pieces on top of each other. Cut the dough pieces at one corner to the middle and distribute them on a piece of baking paper in the 12 wells of a muffin tin.

Fill tartlets

Distribute approx. 1.5 tbsp of cream into each well. Insert vegetable slices from the outside in a circle so that a flower is created.

Bake tartlets

Bake the prepared filo dough tartlets in a preheated oven (electric oven: 200 °C/convection oven: 175 °C) for approx. 20 minutes. This step is done outside of the Thermomix.
