Description

These small, warm feta pockets are simply irresistible! I really like to make them as a small snack in between or as a delicious appetizer when guests come. The preparation is very simple and quick - perfect when you need something fast. The salty feta harmonizes wonderfully with the sweet honey and the aromatic herbs. Baking in the oven makes the wraps nice and crispy and the feta wonderfully soft. An absolute favorite recipe that is well received on every occasion!

Ingredients (7 ingredients)

  • 6 piece Tortilla wraps
  • 400 g Feta cheese
  • 2 piece Egg(s)
  • 1 etwas Honey, liquid
  • 1 etwas Oregano
  • 1 etwas Pepper freshly ground
  • 1 etwas Sesame

Preparation (4 steps)

Prepare feta

Divide the feta lengthwise into three pieces. No Thermomix setting required.

Top and season wraps

Place the feta pieces in the middle of the tortilla wraps. Drizzle with the liquid honey and season with oregano and freshly ground pepper. No Thermomix setting required.

Fold and brush wraps

Fold the wraps together and fix with wooden toothpicks if necessary. Put the egg in the mixing bowl and whisk for 10 sec./speed 3. Brush the wraps with the whisked egg and decorate with sesame seeds.

Bake wraps

Place the prepared wraps on a baking sheet lined with baking paper and bake in a preheated oven at 170°C (convection) for approx. 10 minutes until golden brown. No Thermomix setting required.

About this recipe

These feta pockets came about when I was once again faced with the challenge of conjuring up a quick and uncomplicated snack for a spontaneous visit. I still had feta, wraps and honey at home - a combination that turned out to be a complete success! I was inspired by a vacation in Greece, where feta is offered in countless variations. The feta is of course the star of these pockets. I recommend using a good quality feta that is not too dry. It should have a slightly creamy consistency and a distinctive, salty taste. The tortilla wraps serve as a crispy shell and give the whole thing structure. They should not be too thin so that they do not tear during baking. The liquid honey provides a pleasant sweetness that perfectly balances the salty feta. You can vary here depending on your taste. A strong forest honey goes just as well as a mild acacia honey. Oregano and freshly ground pepper bring a Mediterranean note to the pockets. The Thermomix® plays a small but important role in this recipe. Whisking the egg is quick and even. It is important that the egg is well whisked so that the wraps have a beautiful, golden brown color when brushed. Make sure to clean the mixing bowl immediately after whisking the egg so that it does not dry on. The recipe is already suitable for a vegetarian version. If you like it vegan, you can replace the feta with a vegan feta alternative and the egg with some plant-based milk or a mixture of plant-based milk and agave syrup. There are no limits to your imagination when it comes to spices. Thyme, rosemary or chili also go very well with feta. Garlic powder or smoked paprika powder can also provide an interesting flavor. The feta pockets taste best warm, straight from the oven. They can be served pure as a snack or appetizer. A fresh salad with a light vinaigrette dressing goes well with this. A dip made from yogurt and mint also harmonizes wonderfully with the salty pockets. If you like it a little heartier, you can serve the pockets with olives or dried tomatoes. The baked feta pockets can be kept in the refrigerator for about 2-3 days. You can either eat them cold or warm them up briefly in the oven or microwave. However, they lose some of their crispness. The feta pockets can also be prepared well in advance. The topped and folded wraps can be stored in the refrigerator until baking. So you quickly have a delicious snack ready when unexpected visitors arrive.
