Description

This goat cheese almond roll is a real eye-catcher on any buffet! The creamy goat cream cheese, refined with lemon and fresh chives, harmonizes wonderfully with the crunchy almond crust. The preparation is uncomplicated and succeeds in no time with the Thermomix®. I serve crispy baguette chips with it - perfect for dipping and enjoying. Ideal as a starter, finger food or as part of a summer brunch. A recipe that is always well received by my guests!

Ingredients (9 ingredients)

  • 250 g Goat cream cheese
  • 2 tbsp Crème fraîche
  • Salt
  • Pepper
  • 1 piece grated zest of organic lemon
  • 75 g Almonds (with skin)
  • 1 bunch Chives
  • 0.5 piece Baguette (approx. 200 g)
  • 2 tbsp Butter

Preparation (5 steps)

Prepare goat cream cheese cream

Thermomix® Setting
20 sec/Speed 3

Put 250 g goat cream cheese, 2 tbsp Crème fraîche, salt, pepper and the grated zest of 1 organic lemon into the mixing bowl and mix for 20 sec/speed 3. Place the cream as a strip (approx. 15 cm long) on a baking sheet lined with baking paper and shape into a roll. Refrigerate the roll for approx. 30 minutes.

Chop almonds and cut chives

5 sec/Speed 5

Put 75 g almonds (with skin) into the mixing bowl and chop coarsely for 5 sec/speed 5. Transfer the almonds. Wash 1 bunch of chives, shake dry and cut into fine rolls.

Prepare almond-chives mixture

Mix the chopped almonds and the chopped chives in a bowl and spread on a piece of cling film.

Coat goat cheese roll

Loosen the chilled goat cheese roll from the baking paper with a wide knife or palette and carefully place it on the almond-chives mixture. Roll in it so that it is completely covered. Wrap in cling film and refrigerate for approx. 1 hour.

Prepare baguette chips

Cut ½ baguette (approx. 200 g) into thin slices. Heat 2-3 tbsp butter in a large pan. Fry baguette slices in it from both sides until golden brown. Remove and let cool.
