Description

Fine piggy biscuits from the Thermomix® are a sweet snack for the Christmas season. The simple biscuit recipe with flour, icing sugar, egg and margarine yields approx. 24 servings. Preparation in the Thermomix® takes about 50 minutes, of which 30 minutes is active working time. Ideal as finger food, dessert or for baking with the family.

Ingredients (9 ingredients)

  • 300 g Flour
  • 100 g Icing sugar
  • 1 Päckchen Vanilla sugar
  • 1 Stück Egg (size M)
  • 200 g Margarine (cold)
  • 48 Stück Chocolate drops (bake-stable, on the baking shelf)
  • Baking paper
  • Drinking straw or kebab skewer
  • Round cookie cutters in two sizes or shot and water glass

Mix dry ingredients

Place 300 g flour, 100 g icing sugar and 1 packet of vanilla sugar in the mixing bowl and mix for 15 sec/speed 4.

Prepare dough

Separate one egg, set aside the egg white. Add the egg yolk, the flour-sugar mixture and 200 g of cold margarine in small pieces to the mixing bowl and process into a dough for 2 min/kneading stage. If necessary, scrape from the edge with the spatula.

Shape dough

Remove the dough from the mixing bowl and roll out thinly to about 4 mm on a floured work surface or on floured baking paper. Cut out the dough circles with two different sized round cookie cutters or glasses. Preheat the oven to 180 °C (convection: 160 °C). Line a baking tray with baking paper.

Design biscuits

Place large dough circles on the baking tray lined with baking paper. Place a small dough circle on top. Pierce the holes with a straw or wooden skewer. Shape the ears from dough and place on top. Place 48 chocolate drops as eyes.

Bake biscuits

Bake lucky piggy biscuits in the preheated oven for about 15 minutes until they are very lightly browned. Pull from the tray with the baking paper and let cool on a wire rack.

Prepare glaze

10 sec/keine/Speed 8

Place some icing sugar in the mixing bowl and pulverize for 10 sec/speed 8. Stir in a little water to create a creamy glaze. Color pink with red food coloring.
