Description

This flammkuchen with red onion, goat cheese and pear is a delight that I often prepare at home. The combination of the sweetness of the pear with the intense flavor of the goat cheese and the red onion is simply spectacular. It is perfect for a quick weeknight dinner or as an appetizer for a gathering with friends. The dough is crispy and light, and the touch of thyme gives it an irresistible aroma. Go ahead and try this version of the classic German pizza, you will love it! The preparation is simple and the result is a tasty and original dish.

Ingredients (16 ingredients)

  • 175 ml Water
  • 15 g Fresh baker's yeast
  • 150 g Strong flour
  • 100 g Pastry flour
  • 50 g Whole rye flour
  • 5 g Salt
  • 2 g Dried thyme
  • 15 ml Extra virgin olive oil
  • 180 ml Crème fraîche or thick cream
  • 1 piece Medium pear
  • 15 ml Extra virgin olive oil
  • 1 piece Red onion
  • 100 g Cooked ham in cubes
  • 80 g Goat cheese
  • to taste Ground black pepper
  • to taste Salt

Preparation (5 steps)

Heat the water and dissolve the yeast

Pour the water into the glass and heat 2 Min./37°C/Stufe 1. Add the crumbled yeast and mix 10 Sek./Stufe 3. Let stand in the glass for 10 minutes.

Mix the flours and knead

Thermomix® Setting
2 min/Kneading speed

Add the strong flour, pastry flour, whole rye flour, salt, dried thyme and extra virgin olive oil to the glass. Knead 2 Min./Knetstufe. If the dough is too dry, add a little more water. If it is too wet, add a little more flour. Form a ball and place in a container lightly greased with oil, cover and let rise until doubled in size, between 45 and 60 minutes.

Preheat the oven and stretch the dough

Deflate the dough and separate into two portions. Form two balls and let rest 15 minutes, covered. Meanwhile, preheat the oven to 250ºC and line a tray with parchment paper. Stretch the two portions giving them an oval shape and place on the tray.

Prepare the topping

Mix the crème fraîche with the extra virgin olive oil, salt and black pepper in a bowl. Spread the mixture over the surface of both doughs.

Add the ingredients and bake

Spread over the chopped red onion, the peeled and thinly sliced pear, the diced cooked ham and the crumbled goat cheese. Add a little coarse salt and black pepper to taste. Bake for about 10-13 minutes, until the dough is golden brown.
