Description

This flatbread with mushrooms and mozzarella is a vegetarian main course with Italian-Mediterranean flavors. The dough is prepared in the Thermomix® and then proofs for an hour. Topped with fresh button mushrooms, porcini mushrooms, and creamy buffalo mozzarella, this dish is hearty and filling. The preparation time is about 2.5 hours, including the resting time for the dough. The recipe is designed for 4 servings.

Ingredients (14 ingredients)

  • 400 g Flour
  • 7 g Dry yeast
  • 1 Prise Sugar
  • 1 Prise Pepper
  • 0.5 TL Salt
  • 10 g Porcini mushrooms
  • 125 g Buffalo mozzarella
  • 500 g Small button mushrooms
  • 1 Zehe Garlic
  • 2 EL Olive oil
  • 1 Bund Arugula
  • 1 Bund Parsley
  • 1 etwas Flour for the work surface
  • 250 ml Warm water

Preparation (9 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 400 g flour, 7 g dry yeast, 1 pinch of sugar and 0.5 tsp salt into the mixing bowl and knead for 2 min./kneading stage to form a dough. Slowly add 250 ml warm water through the lid opening during kneading.

Let the dough rise

Remove the dough from the mixing bowl, place in a large, oiled bowl and cover and let rise in a warm place for about 1 hour.

Soak porcini mushrooms

Pour boiling water over 10 g porcini mushrooms and let steep for about 10 minutes until the mushrooms are soft. Drain, collect the liquid and use it for other purposes.

Prepare mozzarella

Drain 125 g buffalo mozzarella and cut into thin slices.

Prepare button mushrooms

Clean 500 g small button mushrooms, leave small mushrooms whole and slice larger ones.

Prepare garlic

3 min/248°F/Speed 1 120

Peel 1 clove of garlic and put it in the mixing bowl. Chop for 3 sec./speed 7. Push down with the spatula. Add 2 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Roll out and top the dough

Roll out the dough on a floured work surface into two large or four small ovals. Spread the garlic-oil mixture on the bases. Top the bases with mozzarella, button mushrooms and porcini mushrooms. Season with salt and pepper.

Bake pizza

Place a pizza on an oiled baking sheet. Bake in a preheated oven (electric oven: 240 °C/convection oven 220 °C) for 7-10 minutes until the base is crispy and golden brown. Bake the remaining pizzas in the same way.

Garnish pizza

Sprinkle the finished pizzas with arugula and parsley leaves.
