Description

This bulgur salad is a fresh and light dish, perfect for hot summer days. The combination of bulgur, juicy cherry tomatoes, crunchy cucumbers, fresh spring onions and aromatic parsley creates an explosion of Mediterranean flavors. Lemon juice and extra virgin olive oil add a touch of vivacity and lightness. Preparing this salad is child's play with the Thermomix®, which allows you to cook the bulgur to perfection and finely chop the ingredients. Ideal for a quick lunch, an outdoor picnic or as a tasty side dish. An addition of chopped fresh mint further enhances the flavor of this vegetarian and healthy dish.

Ingredients (10 ingredients)

  • 400 g bulgur
  • 250 g cherry tomatoes
  • 1 piece cucumber
  • 2 piece spring onions
  • 30 g parsley
  • 1 piece lemons _the juice_
  • extra virgin olive oil
  • fine salt
  • pepper
  • mint

Cooking the bulgur

Thermomix® Setting
12 min/212°F/Speed 1 100

Pour 400 g of bulgur and 400 ml of water into the mixing bowl. Add a pinch of salt. Cook for 12 Min./100°C/speed 1.

Preparation of cherry tomatoes

Wash and cut 250 g of cherry tomatoes in half or in quarters. Set aside.

Preparation of the cucumber

Peel 1 cucumber, cut it in half lengthwise, then into strips and finally into cubes. Set aside.

Chop parsley and spring onions

Thermomix® Setting
3 sec/Speed 7

Put 30 g of parsley in the mixing bowl and chop for 3 Sec./speed 7. Transfer to a bowl. Put 2 spring onions in the mixing bowl and chop for 3 Sec./speed 5. Transfer to the same bowl with the parsley.

Combine the ingredients

Pour the cooked bulgur into a large bowl. Add the cherry tomatoes, cucumber, chopped parsley and spring onions.

Season the salad

Squeeze 1 lemon and pour the juice into the bowl. Season with extra virgin olive oil, fine salt and pepper to taste.

Mix and serve

Mix all the ingredients well to evenly distribute the dressing. Serve the bulgur salad with a few sprigs of chopped mint to garnish.
