Description

This gazpacho without pepper is a refreshing and light recipe, perfect for hot summer days. I prepare it often because it is very easy and quick to make with the Thermomix®. The combination of tomato, cucumber, spring onion and garlic results in a cold soup full of flavor and very nutritious. In addition, as it does not contain pepper, it is ideal for those who do not tolerate it well. A splash of apple cider vinegar gives it a delicious acidic touch. It is an ideal starter or snack for any occasion!

Ingredients (8 ingredients)

  • 1 piece spring onion
  • 2 piece cucumbers
  • 5 cdas olive oil
  • 1 tbsp salt
  • 2 cdas apple cider vinegar
  • 1 clove garlic
  • 10 piece tomato
  • 3 piece ice cubes

Preparation (4 steps)

Chop spring onion, garlic and cucumber

Add 1 spring onion, 1 clove of garlic and 2 cucumbers (peeled and chopped) to the Thermomix bowl. Add 5 tbsp of olive oil and 1 tbsp of salt. Chop for 10 seconds at speed 5.

Add the tomato and chop

Add 10 tomatoes (chopped) to the Thermomix bowl. Chop for 30 seconds at speed 10, gradually increasing the speed.

Add vinegar and ice (optional)

Add 2 tbsp of apple cider vinegar and 3 ice cubes (optional) to the Thermomix bowl. Chop for 10 seconds at speed 6.

Cool and serve

Pour the gazpacho into a container and refrigerate for at least 3 hours before serving. Serve cold.
