Description

These walnut coins are a delicious Thermomix® recipe for the Christmas season. The main ingredients are walnuts, flour, egg yolks, sugar and bittersweet chocolate coating. Preparation takes a total of 115 minutes, including 45 minutes of active work, and yields approximately 40 pieces. Ideal as finger food, dessert or with coffee, perfect for the whole family.

Ingredients (11 ingredients)

  • 2 Stück Egg yolks
  • 150 g Margarine (at room temperature)
  • 100 g Sugar
  • 1 Spritzer Lemon juice
  • 225 g Flour
  • 125 g Walnuts (ground)
  • 1 Prise Iodized salt
  • 150 g Bittersweet chocolate coating
  • 150 g Walnut kernels
  • Cling film
  • Baking paper

Preparation (8 steps)

Mix egg yolk, margarine, sugar and lemon juice

Put 2 egg yolks, 150 g margarine at room temperature, 100 g sugar and 1 dash of lemon juice into the mixing bowl and mix for 30 sec/speed 4.

Mix flour, walnuts and salt and add

20 sec/Speed 3

Add 225 g flour, 125 g ground walnuts and 1 pinch of iodized salt to the mixing bowl and mix for 20 sec/speed 3. If necessary, push down with the spatula and repeat the process.

Shape and chill the dough

Remove the dough from the mixing bowl, place on cling film and shape into rolls with a diameter of 3-5 cm. Wrap the dough rolls in cling film and place in the refrigerator for 1 hour.

Preheat oven

Preheat the oven to 180 °C top/bottom heat (160 °C convection oven).

Cut coins and bake

Cut the chilled dough rolls into approx. 1 cm thick coins and place on baking sheets lined with baking paper. Bake in the preheated oven for 8-10 minutes.

Let the biscuits cool

Remove the walnut biscuits from the sheet with the baking paper and let them cool on a wire rack.

Melt chocolate coating

4 min/122°F/Speed 2 50

Put 150 g of bittersweet chocolate coating in pieces into the mixing bowl and melt for 4 min/50°C/speed 2.

Decorate biscuits

Place a dab of melted chocolate coating on the center of the cooled walnut biscuits and stick half a walnut kernel on top. Let the chocolate set.
