Description

These vegan shortcrust pastry orange cookies are an absolute delight during the Christmas season! The delicate orange flavor harmonizes wonderfully with the tender shortcrust pastry. I make them every year and they are always gobbled up in no time. Preparation with the Thermomix® is super easy and fast. The dough can be prepared well in advance and stored in the refrigerator. This way you can bake the cookies in a relaxed way when you have time. A great recipe for anyone who loves vegan Christmas baking!

Ingredients (7 ingredients)

  • 1 piece Organic orange
  • 300 g Wheat flour Type 405
  • 200 g Margarine
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Prise(n) Salt
  • 2 tbsp Powdered sugar

Preparation (5 steps)

Grate orange peel and squeeze out juice

Wash the orange and grate the peel with a grater. Set aside half of the orange zest (approx. ½ tsp) for the dough, the rest for the glaze. Halve the orange and squeeze out 2 tsp of juice. Use the remaining juice for something else.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 300 g wheat flour type 405, 200 g margarine, 100 g sugar, 1 packet vanilla sugar, ½ tsp orange zest and 1 pinch of salt into the mixing bowl and knead for 2 min./kneading setting to form a dough.

Cool dough

Wrap the dough in cling film and place in the refrigerator for 30 minutes.

Bake cookies

Preheat the oven to 160°C top/bottom heat. Line a baking sheet with baking paper. Roll out the dough thinly and cut out cookies with cookie cutters. Place the cookies on the baking sheet and bake for approx. 8 to 10 minutes until golden brown.

Prepare glaze and decorate cookies

10 sec/Speed 3

Let the cookies cool on a wire rack. Put 2 tbsp powdered sugar and 2 tsp orange juice into the mixing bowl and mix for 10 sec./speed 3. Spread the glaze on the cookies and sprinkle with the remaining orange zest.
