Description

This recipe for fallow deer with bacon beans and potato slices is a hearty dish that tastes particularly good in the colder months. The tender fallow deer is combined with spicy bacon beans and crispy potato slices. The preparation is a little more complex, but the result is a feast for the palate. I like to make this dish for special occasions because it is something special. The combination of game, bacon and potatoes is simply unbeatable. If you like it a little spicier, you can use a little more chili flakes.

Ingredients (8 ingredients)

  • 1 x Fallow deer loin, one strand without bones
  • 400 Gramm Potatoes, waxy
  • 400 Gramm Beans
  • 8 Scheibe Bacon
  • 2 Teelöffel Chili flakes
  • 1 x Salt and pepper
  • 1 Schuss Olive oil
  • 1 Schuss Sunflower oil

Preparation (7 steps)

Prepare potatoes

Peel the potatoes and cut into thin slices. Then place in a bowl and season with salt, pepper and chili flakes (optional). Mix well to ensure the spices are evenly distributed.

Cook beans

Thermomix® Setting

Put 400 grams of beans into the mixing bowl and cover with water. Cook for 8 min./100°C/level 1. Then pour the beans into a sieve and drain.

Prepare bacon beans

Roll four to six beans into a slice of bacon and secure with a toothpick. Set aside the prepared bacon beans.

Prepare fallow deer

Rub the fallow deer loin with olive oil and season with salt and pepper. This should be done about 30 minutes before frying so that the meat can absorb the flavors well.

Fry potatoes

Heat sunflower oil in a pan. Fry the potato slices in portions from both sides until golden brown and then keep warm.

Fry bacon beans

Fry the bacon beans in the same pan until crispy on all sides and then keep warm.

Fry and cook fallow deer

Sear the fallow deer loin in the same pan on all sides. Then cook over reduced heat to the desired core temperature (59 degrees Celsius). Turn regularly to ensure even cooking.
