Description

This apple nut whole wheat cake is a poem! I especially like to bake it in autumn when the apples are fresh from the tree. The combination of juicy apple pieces, crunchy nuts and the slightly nutty whole wheat flour makes it a special treat. The cake is not too sweet and is perfect with coffee or tea. The quark keeps it nice and juicy. If you like, you can add some cinnamon to the dough. An absolute must for all apple cake lovers!

Ingredients (14 ingredients)

  • 50 g mixed nuts (e.g. hazelnuts, cashews and walnuts)
  • 1 piece Organic orange
  • 80 g Whole wheat flour
  • 2 tsp Baking powder
  • 100 g ground hazelnuts
  • 100 g ground almonds
  • 1 pinch Salt
  • 600 g Apples (e.g. Elstar)
  • 3 piece Eggs (size M)
  • 125 g brown sugar
  • 8 tbsp Oil
  • 2 tbsp Milk
  • 75 g Low-fat quark
  • 2 tbsp Orange marmalade

Preparation (10 steps)

Chop nuts and prepare orange

Place 50 g of mixed nuts in the mixing bowl and chop for 5 sec./speed 5. Transfer. Wash 1 organic orange, grate the peel and set aside. Halve the orange and squeeze the juice. Set the juice aside.

Mix dry ingredients

10 sec/Speed 4

Put 80 g whole wheat flour, 2 tsp baking powder, 100 g ground hazelnuts, 100 g ground almonds and 1 pinch of salt in the mixing bowl and mix for 10 sec./speed 4. Transfer.

Prepare apples

Peel 3 apples (approx. 200 g each) (2 apples) and quarter them. Core all the apples. Cut the peeled apples into cubes, cut the unpeeled apple into thin slices. Immediately drizzle the apple pieces and slices with the orange juice.

Beat eggs and sugar

Put 3 eggs (size M) and 125 g brown sugar in the mixing bowl and whisk with the butterfly for 3 min./speed 3.

Add liquid ingredients

Remove butterfly. Slowly add 8 tbsp oil to the mixing bowl and stir in for 20 sec./speed 2. Gradually add the flour mixture and 2 tbsp milk and stir in for 30 sec./speed 3.

Fold in quark and orange zest

Add 75 g low-fat quark and the grated orange peel and stir in for 15 sec./speed 3.

Fold in apple cubes

Carefully fold the apple cubes into the dough using the spatula.

Bake cake

Spread the dough in a springform pan (26 cm Ø) lined with baking paper and smooth it out. Arrange the apple slices on the dough like roof tiles and sprinkle the chopped nuts in between. Bake the cake in a preheated oven (electric oven: 180 °C/convection oven: 160 °C) for 35–40 minutes.

Prepare marmalade glaze

2 min/122°F/Speed 2 50

Put 2 tbsp orange marmalade and 1 tbsp water in the mixing bowl and heat for 2 min./50°C/speed 2.

Glaze cake

Remove the cake from the oven. Immediately brush the apple slices with the marmalade. Let the cake cool, remove it from the mold and arrange it.
