Description

This apple crumble cake from the Thermomix® is an autumnal delight with apples, flour, butter, sugar and oat flakes. The cake is vegetarian and ideal as a warm dessert. Prepared in 45 minutes, the recipe yields 4 servings. Perfect for the whole family or for a cozy coffee break.

  • 500 g Apples
  • 150 g Flour
  • 100 g Sugar
  • 100 g Butter
  • 20 g Oat flakes
  • 1 Päck. Bourbon vanilla sugar
  • 0.5 tsp Cinnamon powder
  • 0.5 Lemon
  • 1 tbsp Butter
  • 1 tbsp Icing sugar
  • 1 pinch Salt

Preparation (6 steps)

Preheat oven

Preheat the oven in good time to 200 °C (convection oven 180 °C). Grease an ovenproof casserole dish with approx. 24 cm Ø (or several small dishes with approx. 8--10 cm Ø) with 1 tbsp butter.

Prepare crumbles

Thermomix® Setting

Place 150 g flour, 100 g sugar, 100 g butter (in pieces), 20 g oat flakes, 1/2 tsp cinnamon powder and 1 pinch of salt in the mixing bowl and process into crumbles for 20 sec/speed 4. If necessary, push down with the spatula and repeat the process.

Prepare apples

Peel, quarter, core and cut 500 g apples into thin slices. Place the apple slices in the prepared casserole dish.

Refine apples

Drizzle the juice of half a lemon over the apple slices so that they do not turn brown. Then sprinkle 1 packet of Bourbon vanilla sugar over it.

Distribute and bake crumbles

Spread the prepared crumbles evenly over the apple slices. Bake the apple crumble cake for 30 minutes on the middle shelf in the preheated oven.

Refine apple crumble cake

Immediately sprinkle the finished apple crumble cake with approx. 1 tbsp icing sugar so that it melts slightly and caramelizes.

About this recipe

Apple crumble cake, a classic that has always been very popular in my family. My grandma had a similar recipe that she always prepared with apples from her own garden. The scent of cinnamon and baked apples that then spread throughout the house is one of my fondest childhood memories. This recipe is a tribute to her baking skills, modernized with the help of the Thermomix®. The apples are of course the star of the cake. I prefer a tart variety such as Boskoop or Elstar, as they provide a nice contrast to the sweet crumbles. The lemon is important to protect the apples from browning and to give them a fresh note at the same time. The vanilla sugar enhances the aroma of the apples and harmonizes wonderfully with the cinnamon. The crumbles are the icing on the cake. The flour provides the binding, the butter for the friability and the taste. The sugar contributes to the sweetness, and the oat flakes give the crumbles an additional bite and a slightly nutty note. The cinnamon is essential for the typical crumble taste. In the Thermomix®, preparing the crumbles is child's play. Make sure to use the butter in cold pieces so that the crumbles become nice and crumbly. If the crumbles become too fine, simply help out with the spatula and form larger pieces. For a vegan version, the butter can be replaced with a vegetable margarine. Make sure to use a margarine with a high fat content so that the crumbles still become nice and crumbly. Instead of Bourbon vanilla sugar, normal vanilla extract can also be used. If you like it a little spicier, you can add a pinch of cardamom or nutmeg to the crumbles. The apple crumble cake tastes best lukewarm, straight from the oven. A scoop of vanilla ice cream or a dollop of whipped cream goes well with it. A cup of coffee or tea also rounds off the taste experience perfectly. The cake can easily be stored in the refrigerator for 2-3 days. Before serving, it can be briefly warmed in the oven or microwave. The crumbles can also be prepared separately and stored in the refrigerator. This way, the cake can be prepared spontaneously when visitors announce themselves. The apple filling can also be prepared, but should be drizzled with lemon juice to prevent browning.
