Description

This speculaas sheet cake, prepared in the Thermomix®, is a festive dessert with almonds, butter and speculaas spice. The recipe from the Cakes category yields 24 servings and is ready in 70 minutes. Ideal for the winter coffee table or as a Christmas family meal. Preparation in the Thermomix® makes baking much easier.

  • 150 g Almonds
  • 300 g soft Butter, in pieces
  • 300 g Sugar
  • 4 Stück Eggs
  • 500 g Wheat flour Type 405
  • 300 g Milk
  • 3 EL Speculaas spice
  • 1 Pck. Baking powder
  • 400 g white Coating, in pieces
  • 20 g Coconut fat
  • colorful Sugar sprinkles for garnish

Grind almonds

Add almonds to the mixing bowl and grind for 12 sec/speed 7.

Prepare dough

Add butter, sugar and eggs to the mixing bowl and beat until frothy for 2 min/speed 3. Add flour, almonds, milk, speculaas spice and baking powder and mix everything for 45 sec/speed 4.5 with the help of the spatula.

Complete dough

Baking

Spread the dough evenly on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for 20-25 minutes. Remove and let cool.

Chop coating

Add the coating to the mixing bowl, chop for 5 sec/speed 8 and push down with the spatula.

Melt coating

Add coconut fat and melt for 5 min/50°C/speed 2.

Decorate cake

Spread the glaze on the cake, garnish with colorful sugar sprinkles and let it cool completely. Cut the cake into pieces and serve.
