Description

This Andalusian gazpacho is a cold soup perfect for hot summer days. I have been preparing this recipe for years and it is always a success at home. The combination of fresh tomatoes, green pepper, cucumber and a touch of white wine vinegar creates an explosion of refreshing flavor. It is ideal as a light starter or as a quick and healthy lunch. Also, it is a very economical and easy to prepare recipe, perfect for any occasion. Go ahead and try it and enjoy a delicious homemade gazpacho!

Ingredients (6 ingredients)

  • 1.5 kg tomato
  • 0.5 piece green pepper
  • 0.5 piece cucumber
  • 100 ml extra virgin olive oil
  • 4 tbsp white wine vinegar
  • 1 slice white sliced bread

Preparation (6 steps)

Preparation of the tomatoes

Scald the tomatoes in boiling water for a few seconds to peel them easily. Once peeled, cut them into large pieces and reserve.

Preparation of the vegetables

Peel the cucumber, cut it into pieces. Cut the green pepper into pieces too. Soak the slice of white bread in water and chop it.

Crush the ingredients

Add the chopped tomatoes, cucumber, green pepper and soaked bread to the Thermomix bowl. Crush for 30 seconds at speed 10.

Add oil and vinegar

Thermomix® Setting
15 sec/Speed 4

Add the extra virgin olive oil, white wine vinegar and salt to taste. Mix for 15 seconds at speed 4.

Correct the flavor

Taste the gazpacho and correct the salt and vinegar to taste. If you prefer it finer, you can crush it for a few more seconds at speed 10.

Cool and serve

Refrigerate the gazpacho for at least 30 minutes before serving so that it is very cold. Serve and enjoy.
