Description

This gazpacho is an explosion of fresh and summery flavor, perfect for fighting the heat! I have been preparing this recipe for years and it is always a success at home. The combination of juicy tomatoes, Italian green pepper, sweet onion and a touch of melon (or cucumber, if you prefer) makes it irresistible. It is very quick to prepare with the Thermomix® and can be ready in a matter of minutes. Ideal as a light starter or as a refreshing dinner. Go ahead and try it, you will love it!

Ingredients (11 ingredients)

  • 1 kg tomatoes
  • 1 piece Italian green pepper
  • 1 piece small onion
  • 2 clove garlics without germ
  • 2 piece small carrots
  • 1 slice melon
  • 400 ml water
  • white wine vinegar
  • extra virgin olive oil
  • salt
  • freshly ground black pepper

Preparation (8 steps)

Preparation of the tomatoes

Wash 1 kg of tomatoes, remove the stem and cut them in half. Reserve.

Preparation of the vegetables

Cut 1 Italian green pepper into several pieces, 1 small onion into quarters, 1 slice of melon (or cucumber) into pieces and 2 small carrots into slices. Reserve.

Preparation of the garlic

Peel 2 cloves of garlic and remove the germ. Reserve with the rest of the vegetables.

Crush the vegetables (first part)

Put all the chopped vegetables in the Thermomix glass. Close and program 4 Min./keine/Stufe 5.

Season and mix

After the first minute, stop the Thermomix, lower the ingredients that have remained on the walls of the glass with the spatula and season with salt to taste, white wine vinegar to taste and extra virgin olive oil to taste. Cover.

Continue crushing

Reprogram the Thermomix for 1 Min./keine/Stufe 5.

Add water and crush (second part)

Open the Thermomix, lower the remains from the walls of the glass with the spatula. Close the lid and program 3 Min./keine/Stufe 8. While the Thermomix is crushing, add approximately 400 ml of water through the measuring beaker.

Serve

Once the time is up, the gazpacho is ready. Serve cold. Optionally, it can be strained to remove any remaining seeds. When serving, add freshly ground black pepper to taste and a drizzle of extra virgin olive oil.
